last year on a, "we don't have a kitchen and i am desperate to cook something", whim i bought these mini popsicle molds. they sat on a shelf somewhere in their box until one day in the depth of winter while in a cleaning fit i rediscovered them. we opened the box and eleanor was so excited. i told her that it was way too cold for popsicles but that we would make them all summer long. i made good on that promise yesterday with homemade roasted strawberry frozen yogurt pops. besides the fact that making ice cream with kids is adorable and fun this was the best damn frozen yogurt i've had and eleanor couldn't have been happier because they were pink and, "pink is my favorite color!" (which by the way totally freaks me out but is said with the best 3 year old voice inflection)

roasted strawberry frozen yogurt pops

the night before making set 1 quart of plain whole milk yogurt over a sieve lined with cheesecloth inside of a bowl. cover and refrigerate overnight.

roasted strawberries
-container of strawberries, rinsed, hulled, and sliced
-1/3 c. sugar
-3 tbsp. lemon juice

preheat the oven to 375 degrees. mix the berries with the sugar and roast in the oven for 5-10 minutes. puree in a blender or food processor. add the lemon juice and stir. cover and refrigerate until ready to use.

-1 1/2 c. whole milkmilk
-2 tbsp. cornstarch
-4 tbsp. cream cheese, softened
-1/2 c. heavy cream
-2/3 c. sugar
-1/4 c. brown rice syrup
-1 1/4 c. strained yogurt

mix 3 tbsp. of the milk with the cornstarch in a small bowl and make a slurry. whisk the cream cheese in a medium bowl until smooth. fill a large bowl with ice and water.

combine the remaining milk, cream, sugar, and brown rice syrup in a 4 quart saucepan. bring to a rolling boil over medium-high heat and boil for 4 minutes. remove from the heat and gradually whisk in the cornstarch mixture. return the mixture to a boil and cook over medium-high heat, stirring until slightly thickened, about 1 minute. remove from the heat.

gradually whisk the hot milk mixture into the cream cheese until smooth. add the yogurt and blend well. stir in the roasted strawberry puree. pour the mixture into a ziplock freezer bag and submerge the sealed bag into the ice bath. let stand until cold, about 30 minutes.

pour the frozen yogurt base into the frozen canister of your ice cream maker (i use the ice cream attachment for my kitchenaid) and use according to machine directions.

use a spatula to fill popsicle cups with frozen yogurt and lick the spatula often! freeze for at least 4 hours. enjoy! (no judgement if you eat more than 1...i sure did)
