olive oil bundt cake

3 c. ap flour
1 tbsp. baking powder
1/2 tsp. salt
4 large eggs, separated
2 c. sugar
1 c. plain yogurt
3/4 c. extra virgin olive oil
grated zest of 2 oranges
1 1/2 tsp. vanilla extract
preheat the oven to 350 degrees f. butter the inside of a 10in. bundt pan, dust with flour, and knock out the excess flour.
in a large bowl whisk together the flour, baking powder, and salt. set aside.
in the bowl of a stand mixer fitted with the paddle attachment, beat the yolks until they are pale and light. slowly add the sugar and mix just until incorporated. add the yogurt and olive oil and mix until thoroughly combined. add the orange zest and vanilla.
add the flour mixture in 2 parts, mixing well after each addition.
in a separate bowl, beat the egg whites until stiff peaks form. fold half the egg whites into the batter using a rubber spatula. add the remaining whites and gently fold until they are almost completely combined.
pour the batter into the prepared pan and baked for 40-50 minutes, until a cake tester comes out clean. transfer to a wire rack to cool. once cooled, gently loosen cake from the sides of the pan and turn out onto rack.
